Ingredients:
2 tablespoons of olive oil
8 ounces of button mushrooms, sliced
6 ounces of Italian brown mushrooms, sliced
4 ounces of fresh oyster or shitake mushrooms, sliced
One can of stewed tomatoes (14-ounce)
One can tomato puree (14-ounce)
1/4 cup water
1/2 teaspoon dried basil
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
1/4 cup fresh basil leaves, coarsely chopped
4 cloves garlic, minced
2 teaspoons dried oregano
12 ounces Penne Pasta type
Directions:
For the preparation of this traditional Italian Penne pasta low-fat recipe, heat the oil over medium heat, in a large saucepan. Add the mushrooms and garlic and cook, stirring, until the mushrooms are tender, about 7 minutes. Stir in the stewed tomatoes, tomato puree, water, oregano, basil, pepper, and salt.
Reduce the heat to low and simmer for 20 minutes, stirring occasionally. Stir in the basil and remove from the heat.
Cook the tortellini in a large pot of salted, slowly boiling water until al dente Meanwhile, in a large pot of salted, slowly boiling water, cook the Penne until al Dente. Drain in a colander and transfer to warm serving dishes.
Spoon the sauce over the pasta, serve with warm Italian bread.
UNCOOKED TOMATO SAUCE

Ingredients:
4 or 5 large tomatoes, coarsely chopped
1 cup of cooked chickpeas
1/4 cup of chopped basil (sliced chiffonade-style)
1/4 cup of chopped fresh parsley
2 cloves of garlic, minced
1 tablespoon of olive oil
l tablespoon of balsams vinegar
3/2 teaspoon of freshly ground black pepper
1/2 teaspoon of salt
1/4 cup of freshly grated Parmesan cheese (optional)
In this uncooked tomato sauce recipe, it is recommended to use conchiglie pasta type (medium shells) or orecchiette since they retain chunky sauces very well.
Directions:
Place the chopped tomatoes in a colander and let it drain for about 1 minute, stirring at least once.
Transfer the tomatoes to a large serving bowl and combine with all of the remaining ingredients except the pasta and cheese. Keep it at room temperature until the pasta is ready.
In a large saucepan, bring 3 quarts of water to a boil over medium-high heat. Place the shells in the boiling water, stir, and return to a boil. Cook until "al dente" or for 9 to 11 minutes, stirring occasionally.
Drain the pasta in a colander and shake well to remove the excess water.
Fold the shells into the tomato sauce and serve at once. If desired, offer the Parmesan cheese as a condiment at the table.
To cut chiffonade-style, stack and roll the basil leaves into a cigar-like shape. Slice the leaves widthwise, creating thin "ribbons".

Football accumulator tips – Thursday
After the highs of the Premier League over the last couple of days, it’s back down to earth on Thursday as we should Europe for the best bets. There are very few fixtures, but that doesn’t mean we can’t find some good value, and there are a couple of domestic cup matches that catch the eye.
In France, newly promoted Metz take on Ligue Two opposition in Brest, with a place in the quarter-finals at stake, and based on recent history it promises to be a tight game. Mean while in Belgium, Anderlecht and Gent play the second leg of their cup semi-final, wit the home side protecting a two-goal lead from the first leg. We’re recommending a double on the two games which returns better than 5/1.

Metz were promoted to Ligue One last season after winning Ligue Two by 11 clear points (Brest were back in 7th), but it’s been a tough time for them back in the top tier, and they currently sit bottom of the table. They’ve only won five League games all season, and the only two they’ve won in the last fifteen have been in the cup – 2-1 away at Espinal and 3-0
after extra-time away at Avranches. On that basis you’d think the cup would be welcome relief from their League campaign, but Brest will not be easy opposition. They’re pushing for promotion from Ligue Two themselves, and are second in the table after a good season so far. They’ve only lost 4 times in 23 league games, and are a team in good form. Away from home, they’ve only last 4 in the last fifteen and come here with every chance of getting a result.
The head-to-head between these two confirms that this ought to be a tight game. There have only been two goals scored in the last four meetings on Metz’s ground, with a couple of 0-0 draws and a couple of 1-0 Metz victories. The safest bet on this game would be a punt on under 2.5 goals at around 8/15 and we wouldn’t put anyone off substituting the
draw for that selection, but we’re going for the bigger odds on the stalemate.
Anderlecht v Gent – Correct score 3-1
Anderlecht won the first leg 2-0 and are in a very strong position to progress to the final of the competition, where they're probably play Club Brugges. They’re a close second behind those rivals in the Jupiler League and would be entitled to have one eye on a potential league and cup double. However, they’ll have to get past Gent first, who are not without a chance of turning the tie on it’s head. They’re fourth in the table, just 3 points behind Anderlecht, and are in good recent form. The stat that goes against them though, is the one that tells us they’ve lost their last nine consecutive matches on this ground, and haven’t better Anderlecht here for 15 years. They lost 4-1 on their most recent visit, and over 2.5 goals looks a good bet at evens. It’s a cup game, so Gent have nothing to lose by attacking Anderlecht to try and work their way back into the tie, but that will probably play into the home side’s hands and they’ll be able to expose the visitors at the other end.

U There aren't too many things to get excited about on a Tuesday, but a full schedule of mid week Premier League football is certainly one of them. Without a doubt the game of the evening sees Liverpool host Spurs at Anfield, here are some free football betting tips.

After all the hype over Steven Gerrard's final Merseyside derby, Saturday evening served up a truly dire spectacle for anyone unfortunate enough to see it. For Liverpool – easily the most adventurous team on the night – it was very much a case of two points dropped in one of the most open races for a Champions League place in years.

Similarly to their hosts, Spurs are also in fine fettle with three straight wins in the league and now look like serious contenders for a top four finish. Early prices for Tuesday's clash have Liverpool as 10/11 favourites. Spurs can be backed at odds as long as 7/2, with the draw available at 29/10. Considering the proximity between the two sides in the table and the form of Mauricio Pochettino's men, these odds are surprisingly one-sided.
However, based on their recent record, it is understandable to see why Liverpool are such firm favourites on Tuesday evening. Brendon Rodgers' men have won the last three games between the two sides at an aggregate of 11-0 – with the most recent being the 3-0 drubbing at White Hart Lane earlier in the season.
Furthermore, Spurs have only won once in twenty attempts at Anfield in recent years and only managed one shot on target last time they met in the league. Whichever way you look at it, Tottenham have wretched record against Liverpool.
Moving into the goalscoring markets, and despite Liverpool's excellent defensive record in recent weeks, I expect there to be a few goals on Tuesday evening. The Reds have the 3rd highest league ratio for both teams scoring in their home matches, Spurs have the 3rd highest ratio for both teams scoring in their away matches.
Finally we are looking to the two teams’ star strikers for our final betting tip, if Sturridge starts this is a bet to be on. The odds for Harry Kane and Daniel Sturridge to score anytime as a double are 7/1.

Roma vs Manchester City predictions and football betting tips for tonight’s Champions League match where Man City need to win to have any chance of qualifying.
The busy festive period doesn’t let up this time of year as both Manchester City and Roma come together in Wednesday night’s Champions League clash. Rudi Garcia’s Roma have also been experiencing some strong league form, as they have now pretty much asserted themselves as the second best team in Italy, behind Juventus and ahead of the failing Milan sides. With Kevin Strootman returning to the side after a long spell on the side-lines, Garcia now has a chance to line the Dutchman up alongside the likes of Miralem Pjanic, Juan Iturbe and Mattia Destro in a strong looking attack. Roma will however likely be without Brazilian international Maicon, so the Greek pairing of Kostas Manolas and Jose Holebas will continue their roles at full back. Newcastle’s on loan centre back, Mapou Yanga-Mbiwa, may also be a doubt despite starting last time out against Sassuolo.
For Manchester City, the worst news of all hit them last time out against Everton, with star-man Sergio Aguero being ruled out with a worrying knee ligament injury. His goals against Bayern were priceless and simply couldn’t be replicated by anyone else. The influential David Silva will also be out for Pellegrini, so a forward trio of Samir Nasri, Edin Dzeko and Stefan Jovetic may be on the cards for the Citizens. As Manchester City struggled against Roma when they came to the Etihad, largely through the efforts of a 38 year old Francesco Totti, expect home advantage for the Romans to prove too much for Manuel Pellegrini’s floundering Champions League side.

Despite conceding early goal in 13th minute and losing till the very end of the first halftime, Barcelona managed to get a 5:1 victory in local derby over Espanyol at home, mostly thanks to a great night from Messi who scored three out of five goals for the hosts. The team is now on a run of seven consecutive victories in all competitions, working especially well in attack – they have scored nine goals in last two matches. Tonight, they need a victory over the French side in order to get the first position, while any other result would leave them at the second position – progressing ticket for next stage is already secured almost a month ago. Home side will miss right back Dani Alves (16/0) and offensive midfielder Rafinha (10/0) who are both suspended for this game. Defender Thomas Vermaelen is injured and a long term absentee, who probably won’t be playing for Barcelona this season.
PSG had many problems last weekend in a home game against Nantes, but still managed to get a precious 2:1 three pointer. Visitors took the lead in eight minute, while the hosts replied with two quick goals from Ibrahimovic in 34th and 48th minute. With this victory they continued their title race with Marseille, still being a point below their biggest rival this season. Marco Verratti is also expected to start here, while the visitors only have substitute forward Jean-Christophe Bahebeck (12/2) as absentee here.
Barcelona will surely enter the game strongly in order to win. Quality difference should be seen on the field, as the players of Barca look much more creative and concrete in the offense than the French side which generally struggled in attack in recent weeks, with or without Ibrahimovic.
